Combine the Ingredients. In a medium-sized mixing bowl, whisk together mayonnaise, Greek yogurt, honey, apple cider vinegar, Dijon mustard, salt, and pepper. Mix until smooth and creamy.
Add the Poppy Seeds. Once your base is smooth, stir in the poppy seeds. Make sure they’re evenly distributed throughout the dressing.
Taste & Adjust. Taste the dressing and adjust seasoning if necessary. You can add a touch more honey if you prefer it sweeter, or extra vinegar for more tang.
