Preheat Your Oven. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with olive oil.
Prepare the Salmon. Pat the salmon filets dry with paper towels. Place them skin-side down on the prepared baking sheet. Season with salt and pepper.
Make the Dijon-Herb Mixture. In a small bowl, whisk together Dijon mustard, garlic, lemon juice, olive oil, rosemary, and thyme.
Coat the Salmon. Spread the Dijon mixture evenly over the top of each salmon filet, making sure to cover the entire surface.
Bake. Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork. For a slightly crispy top, switch to broil for the last 2 minutes of cooking.
Garnish and Serve. Remove the salmon from the oven and let it rest for 2 minutes. Garnish with lemon slices and fresh parsley if desired. Serve immediately with your favorite sides.
