Instructions
First, in a mixing bowl, combine the chicken, egg, onion, Dijon mustard, and olive oil.
Next, shape the mixture into small balls or cylinders with the cheese cube in the middle.
Place the balls of chicken mixture on a plate or pan, cover them, and put them in the freezer for 20 minutes so they can be easily coated.
While the chicken is chilling, whisk together the flour, bread crumbs, parsley, and parmesan cheese.
Pull the chicken out of the freezer and coat the chicken mixture with the flour mixture.
Preheat the air fryer to 375°F.
Spray the chicken croquettes with non-stick cooking spray.
Place the chicken croquettes in the air fryer basket, leaving enough space between them to allow for even cooking.
Cook the croquettes for 10-12 minutes, or until they are golden brown and crispy on the outside.
