To prepare the chicken, lay one chicken breast between two sheets of plastic wrap and pound it until it is an even thickness, about 1/4 inch. Repeat with the remaining chicken breasts.
In a shallow dish, combine the flour, salt, and black pepper. In another dish, whisk together the eggs.
In a third bowl, mix together the panko breadcrumbs, parmesan cheese, oregano, basil, garlic powder, and a pinch of salt.
Dredge each chicken breast in the flour mixture, shaking off any excess. Then dip it in the egg mixture, letting any excess drip off. Finally, coat the chicken breast in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
Place the breaded chicken breasts in the air fryer basket, making sure they don't touch each other. Lightly spray the chicken with olive oil cooking spray.
Air fry the chicken for 8-10 minutes per side, or until it is golden brown and crispy.
