Rinse 1 cup of long-grain rice in a fine mesh strainer. Add the rice to the Instant Pot along with the water, ghee, and salt.
Close the lid and set the Instant Pot to manual high pressure.
Cook for 10 minutes. Once the cooking time is complete, allow a natural pressure release for an additional 10 minutes. Manually release all remaining pressure.
Remove the Instant Pot lid and add in the diced cilantro.
Remove from the Instant Pot liner, squeeze fresh lime juice over the top, serve, and enjoy!
