Prepare the Potatoes. Wash and slice the potatoes very thinly using a mandoline slicer for uniform thickness. Soak the slices in cold water for at least 30 minutes to remove excess starch, which helps in achieving crispiness.
Season the Chips. Drain the potato slices and pat them dry with a clean kitchen towel. In a bowl, toss the potato slices with olive oil, salt, garlic powder, paprika, and black pepper until evenly coated.
Air Fry the Chips. Preheat your air fryer to 360°F. Arrange the potato slices in a single layer in the air fryer basket, making sure they don't overlap (you may need to work in batches). Cook for about 15-20 minutes, flipping the chips halfway through, until they are golden brown and crispy.
Cool and Crisp Up. Let the chips cool on a wire rack for a few minutes after cooking. They will continue to crisp up as they cool.
