How to make Stuffed Tomatoes with Spinach
1. Cut the tops off of the tomatoes. Remove and discard pulp.
2. Season insides of the tomatoes with black pepper and salt. Invert the tomatoes onto paper towels and allow to drain.
3. Combine the spinach, Boursin cheese, sour cream, salt and pepper and ¼ cup of the shredded parmesan.
