Start by rinsing the rice under cold water until the water runs clear. This helps remove excess starch for fluffy rice. In a medium pot, heat olive oil over medium heat. Add the rice and toast it in the oil for about 2-3 minutes until it begins to turn golden.

SAUTE

Add the chopped onion to the pot with the rice. Sauté for 3-4 minutes until the onion becomes translucent and fragrant. Add the minced garlic and sauté for an additional 30 seconds, just until fragrant.
