Sheet Pan Bhindi Masala Indian Okra

1. Preheat oven on Broil. 2. Move a shelf down so it’s not too close to the broiler. 3.  Prepare a baking sheet by lining with foil. 4. Slice the okra into chunks and place in a bowl. 5. Add onion into the bowl. 6.  Pour over the oil and all the spices.

7. Spread vegetables across the baking tray as even and flat as possible. 8. Broil for 15 minutes, stirring once halfway. 9. As the okra and onions are almost cooked, clear away a space in the middle, and place tomatoes in this space to broil along with the okra and onions.

10. Once the tomato has wilted and is cooked through, remove the pan from the oven, pour lemon juice, and mix well. 11. Plate and garnish with cilantro. 12. Serve with naan, chappatis, or eat plain. I often eat this hot one day, and with yogurt the next day as a cold salad.
