What You'll Need

– Baby New Potatoes,  – Vegetable Oil – Salt  – Ground Black Pepper – Slender Green Beans – Tuna Fillets – Cherry Tomatoes – Butter Lettuce Leaves – Hard-Boiled Eggs – Nicoise Olives – Olive Oil – Red Wine Vinegar – Dijon Mustard – Herbes de Provence

How to make Salade Niçoise

1. Toss potatoes, green beans, and grape tomatoes with the 2 teaspoons vegetable oil, salt and pepper.  2. Cook at 400°F for 10 minutes.  3. After 10 minutes, brush tuna on both sides with a 1 tablespoon vegetable oil and season to taste with salt and coarsely ground pepper.

4. Add tuna to basket on top of the vegetables. Cook for 5 minutes for tuna that is cooked medium-well. 5. At end of cook time, remove tuna and let it rest for 5 minutes. Slice tuna thinly across the grain.

6. Combine vinegar, salt, mustard, olive oil, black pepper, and Herbes de Provence to taste in a small jar with a lid. Shake to combine. 7. Arrange food on the plates. Drizzle all with the vinaigrette. Serve immediately.
