Prepare the Crust

Preheat your oven to 325°F. In a mixing bowl, combine the finely crushed Oreo cookies and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake the crust for 10 minutes, then remove it from the oven and let it cool.

Make the Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the sour cream and vanilla extract, mixing until fully combined. Add the eggs one at a time, beating on low speed after each addition until just blended. Gently fold in the chopped Oreo cookies.

Bake the Cheesecake

Pour the cheesecake filling over the cooled crust, spreading it evenly. Place the springform pan on a baking sheet and bake in the preheated oven for 50-60 minutes, or until the center is almost set but still slightly jiggly.
