How To Make Keto Apple Pie Filling

1. Peel eggplant and chop into small dices. 2. Add butter, eggplant, stevia and water in a saucepan. Cover and cook until the eggplant is cooked through. 3. Add in apple pie spice and xanthan gum and stir.  Allow to cook and thicken for 1-2 minutes. 4. Serve with whipped cream and do not treat the whipped cream as optional in this recipe.
