How To Make Roasted Eggplant In The Oven

1. Smear eggplant with oil. 2. Place on a baking pan. Turn on broiler and place eggplant close. 3. Roast at 400F until it is soft, moving every 5 minutes to a different side. 4. Place eggplant in a paper bag and close. Set it aside for 15 minutes. 5. Quickly peel the eggplant over the pan, letting the pan capture all the juices. 6. Use a fork to mash the eggplant.

How To Make Roasted Eggplant On A Gas Stove

1. Smear eggplant with oil. 2. Turn gas on medium-high heat. Place the eggplant on the flame. 3. Turn eggplant on all sides, until skin is charred and your eggplant is soft. 4. Place in a paper bag and close. Set aside for 15 minutes, allowing to steam. 5. Peel the eggplant over the pan. Letting the pan capture all the juices. 6. Use a fork to mash the eggplant.

1. Heat the Instant Pot, and when it’s hot, put in oil. Put in layer of eggplant slices. 2. Do not mess with them until they are charred at the bottom.  3. Put in some more eggplant slices. You may need to put in more oil. Scrape up the char from the bottom. 4. Pressure cook on High for 3 minutes. 5. If you have too much water at the bottom, turn on sauté and let it cook off.
