INGREDIENTS

Portobello Mushrooms- I prefer portobello when I'm stuffing mushrooms because they're larger and I feel like I get more "bang for my buck" with prep work. – Baby Spinach- Is tender and cooks up quickly when stuffed inside of the mushrooms. – Cream Cheese- Melts up deliciously creamy and pairs well with the meaty flavors of the portabello mushrooms. – Mozzarella Cheese- Creates a bit of a "crust" on top of the mushroom caps when they are air fried to give the illusion of a breadcrumb topping while still keeping each bite low carb. – Olive Oil Spray- This helps crisp the outside of the mushrooms to give a depth of texture in each bite. – GarlicSaltPepper

STEP 1

Clean the mushrooms and carefully remove the stems from the mushroom caps.

STEP 2

In a large bowl, mix together cream cheese, half of the mozzarella cheese, minced garlic, salt, pepper, and chopped spinach.

STEP 3

Spoon the filling into the mushroom caps and spray the mushrooms lightly with olive oil.

STEP 4

Place the mushrooms into the air fryer basket and air fry for 10 minutes.

STEP 5

Two minutes before the cooking time is complete, add reserved mozzarella cheese and complete the cooking cycle.

Carefully remove the stuffed mushrooms from the air fryer basket and serve.
