These delicious little bites of Turkish Chicken Kabobs are a lovely dish called Tavuk Shish, and guess what? They're low carb, keto, and just perfect for the Air Fryer.

What Is Tavuk Shish?
Tavuk Shish is actually a Turkish Chicken Kabob, but I'm lazy/efficient so I don't bother to use skewers when I make this in my Air Fryer. Rest assured, this still tastes fantastic, even without the sticks in the middle.
You could serve as little pieces of chicken, or you could "reverse skewer", as I like to call it, and put it on skewer sticks after it's been cooked. They look like kebabs, but I don't have to touch raw chicken long enough to skewer it. Win win!
What Do Turkish Chicken Kabobs Taste Like?
Turkish chicken kabobs have a bold yet balanced flavor that’s both savory and warmly spiced.
The yogurt-based marinade makes the chicken tender and juicy while carrying the flavors of garlic, tomato paste, and lemon throughout. The spice blend of cumin, smoked paprika, cinnamon, and cayenne gives the kabobs a distinctive Middle Eastern character. It's earthy, smoky, slightly sweet, and with just a touch of heat.
Air frying adds a charred, caramelized edge that enhances the smoky paprika and gives each bite depth.
Altogether, Turkish chicken kabobs taste rich, aromatic, and vibrant, with layers of savory spice, tangy citrus, and subtle warmth that linger on the palate.
Ingredients You'll Need
- ¼ cup Full-Fat Greek Yogurt- Acts as the base of the marinade, tenderizing the chicken with its natural acidity and adding a creamy texture that helps the spices cling.
- 1 tbsp Minced Garlic- Infuses the marinade with bold, savory depth that complements the warm spices.
- 1 tbsp Tomato Paste- Adds richness, tang, and a slight sweetness, while also giving the kabobs their beautiful red hue.
- 1 tbsp Vegetable Oil- Helps carry the flavors of the marinade into the chicken and keeps it moist during grilling.
- 1 tbsp Lemon Juice- Provides acidity that tenderizes the chicken and adds a fresh, zesty brightness to balance the spices.
- 1 tsp Salt- Enhances all the flavors in the marinade and ensures the chicken is seasoned throughout.
- 1 tsp Ground Cumin- Brings an earthy, nutty flavor that forms the backbone of the Turkish spice profile.
- 1 tsp Smoked Paprika- Adds smokiness, mild sweetness, and a vibrant color to the marinade.
- ½ tsp Ground Cinnamon- Contributes subtle warmth and sweetness, creating a signature Middle Eastern depth of flavor.
- ½ tsp Ground Black Pepper- Balances the spices with a sharp, earthy bite.
- ½ tsp Cayenne Pepper- Lends gentle heat, which can be adjusted to taste for a spicier kick.
- 1 lb Boneless Skinless Chicken Thighs– The star of the kabobs, chicken thighs stay juicy and flavorful when grilled, absorbing all the rich marinade.
How Do You Make A Turkish Chicken Kabob?
- Prep Marinade. In a large bowl, stir together the Greek yogurt, garlic, tomato paste, lemon juice, oil, salt, cumin, paprika, cinnamon, black pepper, and cayenne pepper until the spices are well-blended into the yogurt.
- Add chicken. Add the chicken pieces and mix until the chicken is well-coated with the marinade. Allow the chicken to marinate for 30 minutes or for up to 24 hours in the refrigerator.
- Air Fry. Remove the chicken from the marinade and place in a single layer in the air fryer basket. Set the air fryer to 370ºF and cook the chicken for 10 minutes.
- Flip and Finish. Open the air fryer and flip over the chicken. Set the air fryer to 370ºF and cook the chicken for another 5 minutes.
- Temp and Serve. Test with a meat thermometer to ensure the chicken has reached an internal temperature of 165ºF before serving.
Tips And Tricks
To make sure your Turkish Chicken Kabobs turn out juicy, flavorful, and perfectly cooked every time, keep these helpful tips in mind:
- Marinate Long Enough. Let the chicken sit in the yogurt-based marinade for at least 2 hours, but overnight in the fridge gives the deepest flavor and most tender results.
- Use Chicken Thighs. Thigh meat is juicier and more forgiving than chicken breast, staying tender even if slightly overcooked.
- Cut Even Pieces. Slice the chicken into uniform chunks so they cook evenly on the grill or in the oven.
Variations
One of the best things about Lebanese chicken kabobs is how easy they are to customize with different flavors, proteins, and pairings. Here are some tasty variations to try:
- Protein Swaps- Substitute chicken with lamb, beef, or even shrimp for a different spin on traditional kabobs.
- Vegetarian Option- Use marinated halloumi cheese or hearty vegetables like mushrooms, zucchini, or eggplant for a meatless version.
- Citrus Twist- Swap lemon juice for lime or orange juice in the marinade for a fresh citrusy variation.
- Nutty Touch- Sprinkle finished kabobs with toasted pine nuts or sesame seeds for texture and depth.
How Long Do You Need To Marinate Chicken Kabobs?
The marinade can technically be done in thirty minutes, but it can be left up to 24 hours for a full flavor infusion. The easiest way to do would be to put it in the night before and let it marinate overnight.
The spice combination in this dish is incredible, and you will want to taste every bit of it!
What To Serve With Turkish Chicken
So typically, you'd eat this Turkish Chicken Kebab in a sandwich or with rice. This differs a little by region and personal preference. I like to serve it with tzatziki and/or hummus and I've started using Joseph's pita bread which is both low carb and delicious.
I've provided an Amazon affiliate link for the bread, but it's a LOT cheaper at Walmart so I'd try that first to see if your local store has it.
How Long Do They Last?
Turkish chicken kabobs keep well for a few days, making them a great option for meal prep or leftovers.
Once cooked, they should be stored in an airtight container in the refrigerator, where they will last for about 3 to 4 days. The yogurt-based marinade helps keep the chicken moist, so the flavor holds up nicely even after reheating.
Can You Freeze Them?
If you’d like to store them longer, you can freeze the cooked kabobs for up to 2 to 3 months.
To enjoy again, thaw overnight in the fridge and reheat gently in the oven or air fryer to restore their juiciness and charred edges.

- These only need to marinate for 30 minutes, but overnight is best. Ideally make the marinade the night before and let them sit in the fridge until you're ready to cook the next day.
- You don't have to cook these on a skewer. Serve them as little bites of chicken, or place them on a skewer after their cooked for presentation.

I love throwing this in the fridge to marinate the night before. It makes the chicken super tender. A great way to use your air fryer!

Just made this was amazing!! A little too spicy but did not put me off would just use less cayenne next time. Did chicken breast 5 mins longer in air fryer at 180 with salad in wraps. Could eat it all over again yum.

Yum! Really flavorful and loved the cinnamon.
I don't have an air fryer so I just roasted it in a high degree oven. Definitely a fan of this recipe

I suggest you read the ingredients in the pita bread. The kabob recipe looks delicious!

My husband and I LOVED this. Neither of us are a fan of Greek yogurt, but we went ahead and used it for the marinade. I'm so glad we did. The entire dish was absolutely delicious. It was a bit too spicy for us, so I think we'll cut the cayenne in half next time, but other than that, I wouldn't change a thing. We used the pita bread you recommended too (bought from Walmart, tyvm! LOL), and it was fantastic. This was our third recipe of yours (I'm about to review the other two after this), and we've been completely thrilled with all three. Can't wait to try others!

Amazing! This was so delicious and easy as can be. I don't have a basket fryer, I have an Instant Vortex, so just set to Air Fry, 370 degrees and 15 minutes, and it tells me when to turn the meat. 🙂 Served it with Lebanese Cabbage Salad (Salatet Malfoof). So, it was keto, to boot. Thank you for a fantastically easy and fantastically delicious recipe!

I made this again, tonight, but not quite as directed. I used skin-on bone-in thighs, and then broiled them--30 mins skin side down, 20 mins skin side up. It was still fabulous. Just wanted to report that the marinade can be used in different ways, not just in an air fryer, as kebobs.
