Prosciutto is different from bacon in a lot of ways. For one, bacon is typically made from pork belly, whereas prosciutto is made from the hind leg of the pig.
Prosciutto is also cured to the point that it is safe to eat without requiring cooking.
Prosciutto has considerably less fat in it, which results in it crisping much faster than bacon when cooked. It also has a more savory and salty flavor profile than bacon.
What Makes This Prosciutto Appetizer "Spanish"?
This Spanish Prosciutto Wrapped Shrimp recipe is actually a classic shrimp appetizer that is just wrapped in bacon. Why you ask? Because bacon. Need I say more?
Also, smoked paprika is quite classic for Spanish recipes. It has a wonderful flavor profile and really adds a lot to this dish.

How To Make Spanish Prosciutto Wrapped Shrimp
1. In a bowl, mix together the olive oil, paprika, and black pepper. Mix in the shrimp carefully and let this mixture rest for 30 mins.
2. Meanwhile, soak the skewers in water. Do not skip this step unless you want your oven to catch on fire.
3. Thread the shrimp on the skewers. Start with the fat end and stretch the shrimp, poking your skewer out through its tail. Place on a foil-covered baking sheet.
4. Once you've created the shrimp skewer, take the prosciutto and prepare to get a little frustrated. The slices are very thin and they tend to lump together. Think saran wrap, clinging to itself. What I found was that it was a lot easier to peel the paper off the prosciutto than to peel the prosciutto off the paper. So hold the paper up and peel it off carefully.
5. Use half a slice to wrap the shrimp. Unless you are about to enter your shrimp in a beauty contest (or are OCD), don't worry about how even it looks, it's still going to taste fantastic.
6. Turn oven to Hi Broil. Place shelf about 6 inches away from the heat source. Put in your shrimp and broil for 6-8 minutes but watch it very carefully. When the prosciutto is all crisp and the shrimp are opaque, you are done.
Tips And Tricks For Making Spanish Prosciutto Wrapped Shrimp
- Make sure to serve this dish with plenty of napkins. You'll end up with plenty of prosciutto and paprika goodness all over your fingers, so you'll definitely want to have some napkins nearby.
- You can use regular paprika if you don't have any smoked paprika on hand. If you decide to get some smoked paprika, you can also enjoy it in my Crispy Air Fryer Chicken Fried Steak or my Mexican Pulled Pork.
- You can use bacon instead of prosciutto if you want, but it will have to cooker longer. Prosciutto crisps much faster, which results in shorter cook time.
- If you decide to use bacon, make sure to get the thinnest bacon you can find. Otherwise, you'll end up overcooking the shrimp by the time the bacon gets crispy. And trust me, nobody wants overcooked shrimp.
- It's important that you don't overcook the shrimp. Make sure you set a timer or keep an eye on the oven to make sure of it.
- This recipe is a great meal prep recipe for parties and get-togethers. You can prepare the shrimp, wrap them in prosciutto and keep them in the fridge until you are ready to bake them.
