I don't usually write reviews, but gosh darn it this deserves it. I am a teacher who has off for the summer and I try different recipes throughout the summer to change things up during the year for my family.

Oh my gawd! These recipes are off the chain delicious! Urvashi you're making me look like a Rock Star in front of my family. ????

We are "vegan-ish" and I am in love we this easy peasy lemon squeezy recipe! I'm looking forward to your other recipes. You might make me a regular reviewer if you keep knockin' it outta the park like this. Sorry, I may teach ,but you can't take the Brooklyn out of me. Lol!

Coconut milk, that sounds great! I too did the Indian angle, mustard and cumin seeds, hing, turmeric, chili powder, cumin, coriander, garam masala. Then I added 1.5c of steamed frozen vegetables. It's a meal!!

Very good recipe! Made a couple of changes by necessity and laziness: Only used water for liquid and reduced it by 2 cups. Used immersion blender right in pot but left some unblended (saved washing up.) I agree that this recipe is very flexible!
