This is by far our favourite soup, Urvashi! We double the recipe, and use 1 can of mild Rotel and one can (12 oz) of chopped tomatoes. Can’t do much “heat” but love the taste! We were camping in Florida and couldn’t find Swiss chard. Substituted baby bok choy, and now won’t use anything else! We added carrots to up our veggies!
This is a meal in itself! Delicious!

I meant to include that the portions, as written, are pretty generous. It's a rich, filling soup. We'll be getting somewhere between 5-6 portions out of this, rather than the 4, as written.

I made this recipe tonight out of Urvashi's new Keto Instant Pot cookbook--having decided to "test drive" this soup while my husband was out of town, as the ingredient list is much more to my tastes than his. Urvashi's description and photos accurately reflect the finished soup--it's flavorful and complex and "spiced" without being spicy. I quite liked the texture of the soup, too, although I might add a little more chicken the next time. (The chicken is really lovely and tender and I found myself fishing for pieces.)

Husband will probably want me to make it spicier (I froze two portions so that he could try it), but it's a nice, easy-to-make soup that I would definitely make again.

Made this today and it was fabulous. I cut the chicken into bite sized portions & cooked 5 mins on *low* - oh, so tender! I did find that it was not enough time/pressure to cook the onion enough (I am sensitive to raw onion) and next time will sauté the onions before puréeing them.

This recipe was delicious, and I even forgot the garlic. I can't wait to wait to make it again and try it with the garlic. I'd love to make a larger batch and freeze some. Does it freeze well? Thanks for the wonderful recipe.
