Is it even a recipe when you take a bunch of pre-prepared ingredients and combine them together? Probably not. Is it still delicious, low carb, high protien and high fat? Why yes. Yes it is.
I took steamed shrimp and shelled and cut them into halves, and then mixed in with ready made pico de gallo (onions, tomatoes, jalapeños, cilantro, lime juice and salt) and combined the whole thing with ready-made guacamole (avocado, onions, lime juice, and salt for the simplest recipe), put in a few squirts of low sugar ketchup, and ate it up really fast.
My excuse was I wanted it gone before the guacamole got brown, but the truth is, it was just delicious and fresh, and I loved it.
Shrimp with Pico de Gallo and Guacamole
Low carb keto Shrimp mixed together with pico de gallo and guacamole makes a fast, no-cook, high protein keto snack.
- 6 ounces shrimp, steamed, shelled and cut in half
- 1 cup pico de gallo
- 1 snack size Wholly Guacamole
- 2 tablespoons reduced sugar ketchup
Mix all ingredients together gently, with the guacamole going in right before you eat.
