I heat my milk to 194 degrees F, this is not needed to pasteurize but heating it up and then cooling to 1113 or so gives a much better consistency to the yogurt. I seems as though the high heat and then cooling allows the whey proteins to interact creating creamier less watery consistency. If you don't mind that, heating to over 1i0 degrees if the milk is pasteurized then adding culture is ok. I chill the initial incubation for 6 hours before staining to give me Greek yogurt. I heat 1.5 gallons of milk to 194F, cool it to 116 add my culture and stir well then pour in 6 one-quart jars and put in my stainless-steel thermos like incubators then put up for 10 hours incubation this all takes me 35 minutes every time including set-up and clean up. After incubation I chill them for 6 hours and then strain all this yields me 3 quarts of Greek yogurt. I am living alone and use it in my oatmeal and smoothies daily. I use about 7 quarts per mouth myself, about 1 cup per day I also make mayonnaise, add it to some baked goods, make sauces and salad dressings with it.
