The cooking time stated in this recipe did not work for me. I tried to increase to 25 min, than extended by another 15 min and the rice was still firm though not uncooked. It had a chewy texture and not what i was looking for. Now I'm slow cooking it in my Instant Pot to reach the desired texture. The taste was great (I added some kafir lime leaves) but would definitely try the 1hr15min cooking time as someone else stated.

Make sure you are using glutinous, or sweet black rice. 200 g of the rice, 1000 mL water, season with sugar and salt. Cook on high pressure for 1 hour and 15 minutes with 10 min natural release. I have tried the recipe as written, TWICE, without success. I recently found other instructions online, and will be trying them today. The 1 hour and 15 minutes on high pressure is not a typo. All other recipes by Urvashi I have tried have turned out beautifully, except for this one.

Why not try cooking it longer so it’s done to your liking?

This is my second attempt at the Instant Pot Black Rice Pudding and yet still my rice turned out hard. I am not sure what I am doing wrong. This is disappointing.

Hi Urvashi,

My rice came out hard. I used coconut cream when the recipe said full-fat coconut milk. I am not sure what I was thinking but I have learned rather quickly that coconut cream and coconut milk are not the same things. I will make another attempt with full-fat coconut milk. I added brown sugar as the sweetener.
